3-Ingredient Pumpkin Cake Cookies

The love of pumpkin and pumpkin-spice flavored desserts is an ongoing craze in the country. When I was little, I remember pumpkin pies and pumpkin rolls, but now there’s pumpkin spice lattes and just about everything else that can be imagined. I’ve sampled some of the new pumpkin flavored products, but none of them beat the pumpkin rolls my grandmother used to make for Thanksgiving. The only problem is that the pumpkin roll recipe is complicated and takes a long time to make.
This easy cookie recipe is perfect for pumpkin-flavored treat. I love when recipes have few ingredients because it expediates the cooking preparation and usually means fewer dishes to wash as well. This recipe is just like that. The spice cake mix complements the pumpkin to produce a flavorful dessert and the texture of the cookies is absolutely divine. The cookies end up moist and cake-like. These would go very well with a cream cheese frosting, too. The cookies would be suitable for any fall events and would also do well warmed up as a winter treat.
The really great part about this recipe is that not only does it use three ingredients, it also takes twenty minutes or less to prepare and bake completely. This makes it a very quick cookie recipe that could be made at any time during the week, especially with the limited cleanup required. These pumpkin cookies would be suitable for a dessert, a snack, or even a sweet breakfast and the ease of preparing them makes them an excellent choice. This would also be an easy Christmas cookie recipe if you wanted to add a bit more variety to typical Christmas cookie arrangements.

Cook Time: 10-15 minutes

INGREDIENTS

1 (15.25-ounce) box spice cake mix

1 (15-ounce) can pure pumpkin puree

¼ cup maple syrup

DIRECTIONS

1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.

2. In a large bowl, mix together the cake mix and pumpkin puree until well combined.

3. Using a cookie scoop, shape the dough into 1-inch balls and place on the prepared baking sheet about 2 inches apart.

4. Bake for 10 to 15 minutes until set. Cool.

5. Drizzle the maple syrup over the cookies. Serve.
