Apple Turnovers (Serve with orange cream)

Apple Turnovers

Ingredients: (serves 8)
– 450 gram cooking apples
– 250 gram ready-made puff pastry, thawed, if frozen
– grated rind of 1 lemon
– grated rind of 1 orange
– pinch of ground cloves
– 4 tbsp sugar
– flour, for dusting
– milk, for glazing
For orange cream
– 250 ml doubel cream
– grated rind of 1 orange
– juice of 1/2 orange
– icing sugar, to taste
Instructions:
– Preheat the oven to 425°F/220°C . Peel, core and chop the apples. Mix together the apples, lemon rind and cloves. Mix together 3 tablespoons of the sugar and the orange rind. Roll out the pastry on a floured work surface into a 60×30-cm/24×12-inch rectangle. Cut in half lengthways, then across four times to make eight 15-cm/6-inch squares.
– Mix the remaining sugar into the apple filling. Lightly brush each square with milk and place a little of the apple filling in the centre. Fold over one corner diagonally to meet the opposite one and press the edges together very firmly. Place on a baking sheet. Brush with milk and sprinkle with the orange sugar.
– Bake in the preheated oven for 15-20 minutes, or until brown. Leave to cool on a wire rack. Meanwhiles, to make the orange cream, whip together the cream, orange rind and orange juice until thick. Add icing sugar to taste and whip again until just holding soft peaks. Serves the apple turnovers warm with orange cream.
