I had just got canned so I felt very bored and disappointed. I almost did not want to meet anyone or do anything. I was stuck in a bad situation and it seemed to be hard to get over. My husband suggested that I tried making some kinds of cookies then we would give them to our relatives and friends as best Christmas gifts. This was a good idea to kill time before I can find a new job. Perhaps it helps me to get out my depressing status. I have started reading cookbooks, watching cooking shows and following famous cake blogs to search for an easy and unique recipe.
I came across this formula on a new food blog. These impressive shaped cookies immediately attracted to me because of its simple ingredients and steps. I quite like flavor of almond, I was glad to use both almonds paste and almond sliced to make a cookie. Others ingredients includes bittersweet chocolate, egg white and granulated sugar. Exactly, that is it, very easy to remember and collect. This cookie only took me 40 minutes to make them. There was no step too difficult or complicated. The only thing you should notice is the dough texture. To weigh each ingredient carefully, choose high-quality bittersweet chocolate and almond paste and adjust right speed for the mixer are what to do to ensure a good dough texture. You also need not to chill the dough for hours. Roll balls as soon as you finish the mixture. They came out pretty like as light brown or golden balls. The highlight of this cookie is an unmistaken almond flavor, which you would recognize and love at the first bite. Now I really love cooking and totally satisfy with my cookies. I am going to join a bakery class to improve my skills. Making cake helps me to relax, forget the bad things and have exciting feeling and experience I had not spent before. I hope you also find the interest and joy in cooking as that. Try this recipe at once. Maybe you would create best Christmas gift 2015 for those you love.
- 1/2 pound canned almond paste
- 3/4 cup plus 1 tablespoon granulated sugar
- 2 large egg whites
- 1/3 cup chopped bittersweet chocolate, about 1 1/2 ounces
- 1 cup sliced almonds
First, preheat oven to 350F. Line 2 cookie sheets with parchment paper.
Next, in a large bowl with an electric mixer on medium-high speed, beat almond paste and sugar together until creamy, about 2 minutes. Add egg whites and beat on medium speed until smooth, about 2 minutes, scraping down bowl once or twice. Fold in chopped chocolate.
After that, place almonds in a shallow dish, such as a pie plate. Roll dough between your palms into 1-inch balls. Roll balls around in almonds to coat completely and place on prepared cookie sheet 2 inches apart.
Finally, bake until light golden brown around edges, puffed, and pale gold on top, about 15 minutes. Slide parchment onto racks to cool cookies completely.
