Clean-up is my least favorite part of baking. To make on simple dessert, sometimes you have to use four or five mixing bowls, a hand mixer, a whisk, several spoons, and any other number of cooking implements that then have to be meticulously cleaned and put away. My favorite recipes keep clean-up to a minimum by all being mixed in one or two bowls. This recipe is wonderful because it doesn’t even use one!
These Christmas Magic Squares are a colorful treat with a lot of good flavors combined in a small package. These cookies have coconut, walnuts, chocolate chips, mint chips, and toffee as flavored elements, all topped on a graham cracker base. The chocolate really brings together all the other flavors to make a deliciously cohesive dessert. The cookies are a bit on the sweet side, but the walnuts help to balance out some of the sweetness and some of the sweetened coconut could always be replaced with unsweetened if desired.
The red and green candies on top are what really brings in the holiday spirit to make this an easy Christmas cookie recipe. Replacing the candies with different colors could make this treat appropriate for any color-themed events and the use of the bright, familiar candies could easily make these cookies a favorite with children. These cookies do have to bake longer than some of the other recipes in the book, but the simple preparation and super easy clean-up make it well worth the baking time. Besides, with the number of flavors involved in creating this dessert, it’s sure to have a tasty element that everyone likes. This would be a great cookie to have baking while preparing a more complicated cookie recipe for the holidays.
