Review Corn Muffins

I did this corn muffins for my daughter’s birthday. It is an easy muffin recipe with simple ingredients, buying at Walmart, H-E-B, or any supermarket.

For this recipe, we can make 12 Corn Muffins.

  • 1 cup whole wheat pastry flour
  • 1 cup stone-ground cornmeal
  • 2 eggs
  • 1/1/4 cups buttermilk
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup honey
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt

First, preheat the oven to 425F.

Next, prepare 12 regular muffin cups by spraying or lining with liners.

After that, combine all of the ingredients in a bowl, until completely mixed.

Then, divide the batter among the cups.

Finally, bake for 10-12 minutes, until a cake tester comes out clean.
