Jolly Holly Cookies

When I first saw these cookies, I thought they looked just like little Christmas wreathes. These shiny green cookies are bright enough to stand out in any cookie arrangement and the addition of the red candies makes this a beautifully easy Christmas cookie recipe. The steps involved in making the cookies are simple with relatively few ingredients and steps. With only six ingredients, this recipe would be an easy one to make when you’re low on specialty baking ingredients. Cornflakes, marshmallows, and cinnamon candies are the unusual ingredients that may very well be in your cabinet anyway while the others are baking staples that you probably have on hand. The green food coloring in gives the cookies their bright color while the marshmallows provide all the sweetness and sticking power. The use of cornflakes as the grain in the cookie may seem unusual at first, but the heartiness of the cereal balances the sweetness of the marshmallow wonderfully.
What I really love about this recipe is the red-hot cinnamon candies. I’ve always loved cinnamon candies and, in this cookie recipe, they act as a spicy complement to the sweet cookie as well as adding another pop of color. These cookies look beautiful. With the bright colors, these would be a hit with the kids—as long as they like cinnamon candies. The candies could be removed for children that don’t like the hot flavor of them, of course. The uniqueness of the cinnamon candies would make these popular with adults as well, especially given the unexpectedness of red meaning cinnamon during the holiday season, where it usually represents peppermint. These Christmas cookies would be great to add to any holiday dessert arrangement.

½ cup (1 stick) unsalted butter

30 large marshmallows

1 teaspoon green food coloring, more if darker color desired

1½ teaspoons vanilla extract

4 cups cornflakes

Red-hot cinnamon candies


1. Line two baking sheets with parchment paper.

2. In a large saucepan, combine the butter and marshmallows and heat over medium-low heat, stirring continuously until everything has melted.

3. Remove from the heat and stir in the green food coloring and vanilla.

4. Stir in the cornflakes.

5. Using a cookie scoop, shape the dough into 1-inch balls and place on the prepared baking sheets about 1 inch apart. Decorate with red-hot cinnamon candies.

6. Let stand for 30 minutes until set. Serve.
