- 6 tbsp butter
- 6 tbsp sugar
- 1/2 cup/150 g crunchy peanut butter
- 1 egg
- 3 tbsp light corn syrup
- 1/1/4 cups/175 g all-purpose flour
- 1 tsp baking powder
First, we preheat the oven to 350F/180C. Lightly grease two baking sheets.
Next, cream the butter and sugar together until pale and fluffy. Add the peanut butter, egg, and corn syrup and beat until well combined.
After that, sift the flour with the baking powder and work into the mixture to form a soft dough. On a lightly floured counter, knead the dough lightly, then shape into a thick log. Cover with plastic wrap and let chill 30 minutes.
Then, cut the dough into slices 1/4 inch/5 mm thick and space well apart on the baking sheets. Press a crisscross pattern into the dough with the tines of a fork.
Finally, bake until golden, 10 to 12 minutes. Let cool on the baking sheets for 2 to 3 minutes, then transfer to a wire rack to cool completely. Store in an airtight container for up to five days.
