Tofu Steak with Fennel and Orange

Tofu Steak

Ingredients: (Serves 4)
– 350 gram extra firm tofu, drained
– 1 tbsp gluten-free harissa paste
– 2 tsp extra virgin olive oil
– 1 large orange
– 1 fennel bulb, very thinly sliced
– 1 small red onion, thinly sliced
– 8 stoned black olive, halved
– chopped fresh mint, to garnish
Instructions:
– Preheat the grill to high. Place the tofu on a clean tea towel and press lightly to remove any excess moisture.
– Cut the tofu into four thick triangles. Mix the harissa with the oil. Brush this mixture over the tofu.
– Lift the tofu steaks onto a baking sheet and cook under the preheated grill for 6-8 minutes, turning once, until golden brown.
– Meanwhile, use a sharp knife to cut all the rind and white pith from the orange and carefully remove the segments from the membranes, catching the juice in a bowl.
– Place the orange segments, fennel, onion and olives in bowl. Mix thoroughly to combine and then divide the mixture between four serving plates.
– Place the tofu steaks on top, drizzle with reserved orange juice and garnish with chopped fresh mint to serve.
